  • 2 medium-sized boiled and mashed potatoes

  • 1 cup boiled chickpeas

  • 1/2 cup tamarind chutney

  • 1/2 cup mint chutney

  • 1/2 cup spicy green chutney

  • 1 teaspoon chaat masala

  • 1 teaspoon roasted cumin powder

  • 1/2 teaspoon red chilli powder

  • 1/2 teaspoon black salt

  • 1/2 teaspoon black pepper

  • Fresh coriander leaves for garnish

  • Sweet and tangy flavored water (Pani) - made with tamarind pulp, mint leaves, black salt, chaat masala, and water.

STEP-BY-STEP INSTRUCTIONS:

  • In a large bowl, mix all-purpose flour, baking soda, and salt together. Gradually add water and knead the mixture until you get a soft dough. Cover the dough and let it rest for 15-20 minutes. Knead the dough again and make small balls out of it for gol-gappy. Heat a deep pan or a pot filled with oil for deep frying. Gently press the gol-gappy and deep fry them in hot oil until they turn golden brown.

  • Start by preparing the flavored water (Pani). In a blender, add tamarind pulp, mint leaves, black salt, chaat masala, and water. Blend until smooth. Strain the mixture to remove any solids and set aside.

  • In a mixing bowl, combine the mashed potatoes, boiled chickpeas, chaat masala, roasted cumin powder, red chili powder, black salt, and black pepper.

  • Take the Gol Gappy puris and gently make a small hole on one side of each puri using your thumb.

  • Fill each puri with a spoonful of the potato and chickpea mixture.

  • Drizzle some tamarind chutney, mint chutney, and spicy green chutney over the filled puris.

  • Arrange the Gol Gappy on a serving plate and garnish with fresh coriander leaves.

  • Serve the Gol Gappy with the prepared flavored water (Pani) in a separate bowl or dispenser.
